Our Chef Hervé Cune, a Vosgian, is deeply connected to this land, but has his head in the stars
After having obtained his diploma as a pastry chef, this chef from the Vosges, began his career in the Hotel des Vallées at La Bresse. The head of the establishment had him "try his hand at cooking" and that was the beginning of a beautiful and tasty adventure. Leaving Clos Heurtebise in Remiremont, he sharpened his knives at Régis Marcon - 3 stars today - which already had one Michelin star at the time. Hervé Cune remembers: "He was a ' Bocuse d'or'. I learned a lot. He made me enjoy cooking and simple products - potatoes, mushrooms, which should never be denatured. He was a cook before becoming a chef." When the chef came back to his native land, he started at the Grand Hotel, at the Manoir au Lac, and finally came to the Beau Rivage Hotel in Gérardmer where he took care of catering. Very quickly Michel Harasse recognized a great talent...And so Hervé Cune took over the kitchen of the Jardins de Sophie, Domaine de la Moineaudière in Xonrupt-Longemer, just a stone's throw from Gérardmer.
Very tuned into team work, Hervé Cune gathers inspiration from walks in the forest or on the mountain roads. Because this lover of local products is happiest preparing authentic cuisine, "old-fashioned home cooking" as he calls it.

Hervé Cune earned the title of Maître Cuisinier de France in 2012. This hyperactive, passionate chef opened a new restaurant in 2014 in Gérardmer with the help of his partner, Michel Harasse. La P'tite Sophie, , a bistrot-style restaurant in the heart of the beach resort of the Vosges mountains.
